Fun and Easy Recipes to Keep You Cool This Summer

Summer is one of our favorite seasons not only because of all the fun outdoor activities we are able to enjoy, but also because of all the delicious foods that represent this warm and sunny season.

Summer is hot enough as it is, so we have compiled a few recipes that are sure to cool you down while you enjoy time with your family and friends – even if outdoors in the heat. Here are our favorites.

Sparkling Summer Lemonade
Whether you’re at home for dinner or by the pool with the grandkids, this lemonade recipe is sure to quench your thirst and keep everyone happy.

Ingredients:
        • 3 cups quartered strawberries (about a quart of berries*)
        • 1 cup cold water
        • 1 can (6 ounces) frozen lemonade concentrate
        • 2 cups chilled sparkling water (divided)
        • Whole strawberries for garnish
        • Ice cubes (optional)

Directions:
Process strawberries and water in the blender until smooth. Add the concentrate and 1 cup of the sparkling water. Blend until smooth and pour into a pitcher with the rest of the sparkling water. Serve in tall glasses over ice and garnish with a strawberry on the rim of the glass.


Feta Watermelon Salad
Make this recipe as an appetizer or as a snack. The combination of mint, feta and watermelon is both refreshing and satisfying. You won’t be disappointed.

Ingredients:
        • 2 containers of watermelon cubes (about 8 large cubes)
        • 1 pack of mint leaves (about 5 leaves)
        • Feta cheese crumbles

Directions:
         1. Chop the watermelon cubes into smaller pieces. The size is your choice, and it depends on how big the cubes came in their package.
         2. Make the mint leaves into smaller pieces, either by chopping or tearing with your hands.
         3. Place the watermelon and feta onto a plate or serving bowl. Sprinkle the feta crumbles over your salad, and you’re done!


White Fish Ceviche
This main dish is light, filled with Omega-3s and protein and will leave you feeling deliciously full without the weight of a heavy dish. Best part: it’s quick and easy to throw together.

Ingredients:
        • 2 pounds boneless skinless Tilapia
        • 10-20 limes (enough for 1 cup lime juice)
        • 1 stalk celery
        • 1 jalapeño pepper (or hot pepper or sauce of your choice)
        • 1 square inch piece of fresh ginger
        • 1 tablespoon garlic paste (or fresh garlic, chopped)
        • 1/4 cup fresh cilantro, chopped
        • 1 red onion
        • Salt and pepper to taste

Directions:
        1. Cube the tilapia and place in bowl. The pieces should be bite sized.
        2. Salt the fish (use enough salt to cover the top of the bowl of fish).
        3. Juice limes into bowl.
        4. In a blender, puree hot pepper or hot sauce, celery, ginger, garlic paste, and lime juice.
        5. Add salt and pepper to taste (it’s okay for the mixture to taste really salty, it’ll balance out the sour limes).
        6. Pour mixture into fish and gently stir. Add in cilantro.
        7. Put fish in the fridge and wait for about an hour. You’ll know it’s done when the fish is opaque and not as pink.
        8. While fish is sitting, thinly slice red onions. Keep them in a bowl with water and ice to keep them crisp.
        9. When fish is done, remove onions from water and pat dry with paper towels. Place on top of fish and serve.


Banana Ice Cream
Who said your dessert has to be filled with added sugar and dairy? Enjoy this easy-to-make sweet treat that the whole family will enjoy.

Ingredients:
        • 3-4 frozen, ripe bananas
        • Splash of vanilla almond milk (only enough to mix)
        • Flavoring (ex. Cocoa powder, peanut butter or coffee)

Directions:
        1. Place all ingredients in the blender and mix until it forms a creamy mixture
        2. Either enjoy immediately or place in the freezer to set for later

Summer is the perfect time to try out new recipes. Once you find some good ones, start collecting them so you remember what you liked best. Save them all on your computer or make a book of your favorites.
